    Scope or purpose

    To take an active part in all operational and administrative functions to manage the department in an efficient and profitable manner, with a view to establish Royal Island Resort & Spa as a leading Resort in the Maldives

    General responsibilities of the job

    • Responsible for all operational and administrative functions of the Department during the absence of The Executive Chef and Senior Sous Chef.
    • Checking the quality of all food items produced in the Kitchen to ensure correct taste, texture, colour and presentation.
    • General maintenance of hygiene standards in the kitchen and documentation of cleaning records, temperatures etc,
    • Maintenance of all equipment in the department in good working condition.
    • Co-ordinate training and motivation of staff towards achieving optimum performance.

    Responsible for : Assistant Cooks

    Scope or purpose

    To produce high quality food to exceed the guests` expectations, thus contributing to the smooth function of the department in an efficient and profitable manner, with a view to establish Royal Island Resort & Spa as a leading Resort in the Maldives.

    General responsibilities of the job

    • Responsible for the consistent production of food, assigned from time to time by the superiors to meet the expectations of quality, taste and texture while adhering to safety and hygiene standards of the Kitchen.
    • Produces food for Breakfast, Lunch and Dinner or any other function following the standard recipes and using the correct and authentic ingredients to meet the correct taste, texture, colour and presentation.
    • Keeps the working areas clean & tidy while working and afterwards.
    • Strives to maintain all equipment in the department in good working condition.
    • Takes part in training programmes conducted by Chef/Sous Chef in order to acquire knowledge and to optimize performance.
    • Be well groomed at all times.
    • Follows all Health & Safety rules and regulations of the kitchen to ensure that no contamination take place in the Department.

    Responsible to : Supervisor Food & Beverage

    Scope or purpose

    Carry out all types of food and beverage services

    General responsibilities of the job

    • Meet, greet and seat, take orders from and process making maximum use of outlet Waiters and supervise service of food and beverage and all related activities at the assigned restaurant or bar in the manner prescribed by the establishment.
    • Assist, coordinate and arrange events that will increase the sales of the outlet.
    • Meet with guest requirements and make sure all the guests are satisfied with the service.
    • Ensure workstations are prepared and maintained by the waiters, and check, whether work areas and back of the house areas are kept clean and in an orderly fashion at all times.
    • Ensure duty rotas are made and followed by fellow workers. Check daily staff attendance.
    • Carry out regular briefings and inform about special events, availabilities, non-availabilities, and advice if there is anything to be corrected.
    • Solve guests as well as staff problems and report it to your superiors accordingly.

    • Prepare and maintain the workstation, work area and back of the house areas, in a clean and orderly fashion at all times.
    • Organize cleaning of workstation and to maintain in clean and hygienic condition.
